Pumpkin & Spice Bread

3 cups all purpose flour
1 tsp salt
2 Tbsp Clabber Girl Baking Powder
2 Tbsp baking soda
1 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp ground mace
2 cups sugar - or Clabber Girl Sugar Replacer for Baking
2 cups cooked pumpkin
1 1/2 cups vegetable oil
4 eggs, beaten
nuts & raisins, optional
Combine flour and seasoning in a bowl. In a separate bowl
blend sugar and oil, stir in eggs; add pumpkin. Mix dry
ingredients into pumpkin mix. Add raisins and nuts if using
them. Pour batter into loaf pans or muffin tins and bake
at 350 degrees F. |
Pumpkin Bread
Pudding (printable)
1 pound Pumpkin Bread
9 eggs
1 cup granulated sugar or Clabber Girl Sugar Replacer
for Baking
1/2 ounce vanilla
1 quart Scalded Milk
Raisins
Cinnamon, Nutmeg as needed
Cube bread. Mix together the eggs, sugar,
vanilla until thoroughly combined. Gradually mix in hot
milk to make a custard mixture. Pour custard over the cubed
bread. Top with raisins, cinnamon and nutmeg
Bake at 350 for 30 - 40 minutes.
