Dumplings
This month's Recipe is one I received from my wife's Aunt Helen.
We were visiting her on the eve of the last Indy Car Race in Chicagoland.
She lives in an assisted living community and has developed a
relationship with the Chef. Through this relationship he has asked
some of the residents for some of there favorite recipes. This
month’s
recipe
is an Apple Dumpling that, according to Aunt Helen, is one of
the best she has had and also a family favorite.
I think it is important to save family recipes and if possible
make them with the person that you get them from, especially family
recipes because the represent who you are and were your family
came from. I would also like to thank the Chef of this community
for getting the residents involved with the menus and making them
feel a part of were they live. Please enjoy this recipe and thanks

Helen’s Apple Dumplings (printable)
Serves 12
Sauce:
2 cups sugar
2 cups water
1/4 cup butter
1/4 tsp cinnamon
1/4 tsp nutmeg
Dough:
2 cups flour
2 tsp Clabber Girl Baking Powder
1/2 tsp salt
3/4 cup shortening
2/3 cup milk
Filling:
1/4 cup sugar
1/2 tsp cinnamon
3 cups shredded cooking apples
Sauce:
In a large sauce pan combine sugar, water, cinnamon and nutmeg.
Bring to a boil and simmer for 5 minutes. Add butter and set aside
Dough:
In a large bowl combine flour, Clabber Girl Baking Powder, and
salt. Using a pastry blender cut in shortening until pea size.
Make a well in the center and add milk all at once.
Knead 10 -12 times and roll into a 10 x 12 inch rectangle.
Filling
Combine 1/4 cup of Sugar and 1/2 tsp Cinnamon.
Sprinkle the apples evenly over the dough. Sprinkle the sugar
mixture over the apples.
Roll the dough, starting from the long side and pinch the seam
to seal.
Cut in to 12-1 inch pieces and place in a 13 x 9 pan.
Pour sauce over the dumplings and bake at 350 until golden brown
