Summertime
and the Grilling is Easy
Yes, the word is out: I will grill anything.
If you love the wonderful flavor that grill marks infuse, the
fun - and occasional challenge - of backyard cooking and most
of all lounging for hours with friends and family in a casual
setting, then this month¹s column is for you. It may sound
crazy, yet tastes anything but: throw potatoes and peaches on
the grill.
Well, not together. The potatoes make a perfect side dish for
anything from burgers to lamb chops. And the peaches go great
with ice cream, homemade or not.
Blueberry
Polenta Cake
Blueberries are in! Lemon always brings out their best taste
and honey helps lock in the moisture. The berries may sink to
the bottom of the cake, but I don¹t mind at all. I hope you
don¹t either.
Dulce
de Leche Ice Cream w/ grilled peaches
The best dulce de leche is made from real milk, not condensed
milk. The best I have tasted are from Argentina. Or, you can make
your own (see Mani's archives, October
06).
Grilled
Potato Salad
This is a very forgiving recipe, easy to add in or substitute
whatever is overflowing at the market or in the garden. Red skin,
fingerlings, Yukon gold - just about any potato will do. And all
that zucchini and summer squash that keeps poppin' up - toss it
in as a juicy counterpoint to the denser, buttery potatoes.
