Passover Desserts Always in Demand
At
Passover, the main dishes are never a problem. Admittedly, they
might be heavily into the protein group (meat, chicken, and fish)
for Passover-correct carbs are on a very short list, but we don’t
really concern ourselves with the main menu. It seems to be big
meals, followed by leftovers, broadened out with some new sides.
It is the desserts that are always a dilemma. Not
only must they be flour, leavener, and vanilla-free, they need to
be somewhat easy and quick. Like any big holiday, Passover is labor
intensive. You don’t need desserts that require much thought,
energy and time. You do need uncompromisingly wonderful sweets.
This collection makes the most of fast and easy but is rather upscale
in the end.
The Fallen Chocolate Torte is a respin on a popular
chocolate cake that was once trendy and now is a classic. Flour-free,
it is as decadent as you can imagine and takes well to a variety
of serving or plating suggestions.
The two recipes that follow are fruity and refreshing.
The Banana Cake uses a cake mix in conjunction with scratch ingredients
for a moist, homey cake that is a particular hit with children.
The fruity crisp Apple Cherry Almond recipe wisely uses up bought
macaroons to make a topping on a springy dessert that is, as the
chocolate torte is, as good chilled, as it is room temperature.
If you like compote but want something fancier, this is ideal.
At Passover, make things easy. Choose great recipes

Fallen Chocolate Soufflé Cake
This cake is a truffle, done in Passover style: totally flour
free, but flavor rich. It also can be made ahead and frozen. Served
cold, it tastes more like cheesecake in texture. Do not over bake
this cake – it is meant to rise and fall.
Blitz
Passover Banana Cake
Ok – a cake cheat sheet. Sometimes you want it quick
and easy and at Passover, this is just the thing. Blitz cakes
are old-fashioned ‘quick’ cakes from Jewish European
baking of yesteryear. Blitz means quick – these cakes were
also called lightening cakes, and ingredients varied.
Apple
Cherry Almond Macaroon Crisp
Quite a mouthful! This is fresh fruit and a delightful
matzoh meal, brown sugar and crumbled up macaroon crisp topping.
A good way to add flavor and get rid of those store-bought macaroons.
