Passover! Is there any holiday more miraculous in its history and more problematic in the food requirements? There are restrictions, to be sure, but there is also an opportunity to get inventive.

Kugels or puddings, of varied sorts, make a lovely side, be they sweet or salty, for many a Passover meal. Here are some unusual, wonderfully unique ones to make Passover, pass quickly! For those who enjoy kugels, however, here is a brand new repertoire of amazing ones. Savory kugels are easier to find but the assortment of sweet ones, offered here, are unbeatable and unique.

Laura’s Passover Carrot Pudding
Laura is a friend who shared this fabulous carrot pudding treasured recipe with me. It can be pareve or dairy but is always a hit.

Matzoh Apple Schalet
A lovely, updated, apple laden kugel or pudding, that is perfect Passover.
The vanilla is optional, depending if you use it at Passover and/or you find kosher-for-Passover vanilla.

Almond Pudding
This would be nice with a dairy meal or alongside an elegant sole almandine.

My Famous Mushroom Onion Passover Kugel
This doubles as a stuffing but it really shines as a heat and serve kugel side dish.
If you have some kosher white wine on hand, add 2-3 tablespoons to make this kugel that much more flavorful.

Sweet Apple Farfel Kugel
A lovely, updated, apple laden kugel that is perfect for Passver, and is lovely and spring-ish...on any menu.
