Bishvat
We don’t think of trees and fruity things in the middle of
winter, at least, not in the northeast, we don’t. That is
why the Holiday of the Trees, Tu Bishvat is such a delightful reminder
of not only spring which looks ahead, but the fruity harvest trees
offer. The recipes here use some tree fruits, and aptly, dried fruits,
as Tu Bishvat recipes often do. These are just wonderfully sweet
as well as good in their own right - making them the perfect things
to serve at a Tu Bishvat gathering at your home.

Halvah
Cranberry Orange Scones - These are delectable sweet scones,
with a Biblical ingredient: halvah and a touch of fruity goodness.
Gummy
Bear Chewy Fruit Mini Strudels - This is sometimes referred
to as "haimish strudel" or dried fruit strudel and is
a holiday delicacy that is a cross between a confection and a pastry.
You can use stretch strudel dough for this recipe, or store-bought
kosher puff dough, but this easy Sour Cream Mock Puff dough is tops
in flavor and texture. Instead of the usual Turkish Delight, the
‘delightful’ sweet chewiness in this recipe comes from
gummy bears.
Raspberry
Brown Sugar Bars - Ultra sweet squares, nicely broken up
by the zing of raspberries and buttery pecans. This is a very contemporary
but still fruity baked goodie, perfect for hosting a Tu Bishvat
get together. The perk of raspberries wakes up the palate. Just
make sure you serve these tiny -they are rich.

Bishvat Plum Tart - A sophisticated, plumy pastry offering.
Plums add vibrant color to the winter dessert table. To make this
pareve, use water to replace the cream.
