is the official BBQ kick off month in many households. Given that
it also is the month of parental equal time, Father’s Day,
a nod to dad’s, via the kosher cuisine and the best of some
Jewish food classics. It is the perfect occasion to showcase some
‘dad’ approved recipes.
This month, we take it 'outside' in the kosher kitchen, and transform
a Friday night brisket into a Texas styled event and reconfigure
old-fashioned beef short ribs into finger food from the grill
that bears no resemblance to the usual braised, short rib approach
your grandmother would have made.
Saddle these up with some deli-styled coleslaw, a kosher, homemade
BBQ sauce, and a dessert or two, and you have a father’s
day feast to fete your dad or any-night-in-June menu that pleases
everyone. For dessert, a quick bread of almonds and sour cherries
is just the sweet treat you need or a pareve Plain But Good Yellow
Cake.
By the way, quick tip for these recipes: kosher liquid smoke
adds some smokey chemistry, allowing you to grill either the brisket
or ribs in the oven, should you be rained out.

This quick and easy BBQ sauce turns anything into a smokehouse
gourmet event. Liquid smoke is available in most supermarkets
and is kosher.

Cola Texas Brisket
Thinly sliced and served on warm rolls and homemade Cola BBQ
Sauce, this brisket doesn't have a grandma feel to it at all.
This is mid summer, Father's Day, or tailgate brisket. Slow roast
this on indirect flame, or a double fire (hot coals on the bottom;
new coals or briquettes put on top). You need to slow cook this
over low-medium heat or start it in the oven, finish it on the
grill.

Short Ribs
Beef ribs are usually available in most supermarkets but kosher
butcher shops always have them on hand. Slow cooking makes these
tender. Oven roast them all the way or finish them on the grill
with a sumptuous 'mop'.

Horseradish Coleslaw
My dad loved horseradish on anything. For father's day, in
his honor, I share this zesty slaw recipe. It is perfect for cooling
down the ribs.

Sour Cherry Crumb Cake
A moist quick bread cake with an almond studded crumb topping
and the perk of dried sour cherries throughout. For a non-dairy
cake, (for a BBQ supper) you can choose the Plain But Good Yellow
Cake.
