Dairy Desserts Grace the (Kosher) Thanksgiving Table
November is Thanksgiving – regardless if you
are keeping kosher, and looking ahead to Chanukah just around the
corner this year, occurring as it does in early December. For Jewish
homes throughout American, the Thanksgiving festive spirit is just
another wonderful excuse to enjoy good food, family and friends
at the table. Just one issue –how do you serve non dairy but
traditional desserts?
Simple. You choose flavourful, dairy-free desserts that are both
pareve and feature that spice, nut and fruity laden Thanksgiving
spirit.
One thing you should remember is to find a quality,
unsalted, hard-style margarine that is better to bake pareve recipes
with. Whipped margarines, even if unsalted and kosher, won’t
work as well. You can also substitute oil.
Here are some of my favourites for the harvest holiday.
They are all make-ahead easy, so you have plenty of time for the
turkey and the trimmings.

Cranberry Apple Strudel
This is a tender pastry and cake-like strudel that you make 2-3
days ahead.
Golden
Apple Sauce Pound Cake
Moist and golden, replete with apples, butter, and a gentle touch
of spice.
Sweet
Pumpkin Spice and Pecan Cake
This is a great snacking loaf or hospitality gift bread.
Double
Fudge (Dairy Free) Thanksgiving Chocolate Cake
Here is a rich, moist cake that is milk-and-butter free but
absolutely decadent and flavourful. The big bonus is that this cake
takes literally only seconds to put together. Sometimes, I mix dry
ingredients the night before and in the morning add the remaining
ingredients.
