at 60 - A Blue and White Salute
Even with a world map that is constantly changing, 60 years old
is not that old, in terms of countries. The United States is considered
‘young’ at 132 years. So 60 years old makes Israel
a veritable teenager – in relative terms. To salute Israel
in the kitchen, why not go all out – in blue and white –
the colors of the Israeli flag. A blue and white May birthday
bash is just the thing. These are some specially created recipes
to celebrate with, through the month of way. Independence Day
is May 8th but I have a hunch the party will go on before and
after – for quite some time! Better have the menu lined
up.

Blueberry
Challah for Shabbat
"…And the house of Israel called the name….manna;
and it was like coriander seed, white and the taste of it was
like wafers made with honey. The children of Israel did eat the
manna for forty years…until they came unto the borders of
the land of Canaan.” Exodus XV1 31, 35.
This quote makes it easy to see why sesame seeded, slightly
sweet challah, became the Sabbath bread. Rounded out with blueberries,
this blue and ‘white’ challah is a perfect 60th birthday
bread. Dark fresh blueberries dot the golden dough, reminiscent
of the ‘manna’ that rained down Each bite of this
very special bread is delicious and more so, absolutely wonderful,
more so, dipped in honey on the side.

Baby Coffecake Muffins
These are tender and delicate and bursting with blueberries
in every bite.Semi frozen or frozen blueberries handle better
in recipes –as they ‘bleed’ less when you mix
the batter.
Layered
Blueberry Cream Cheese Tart with Apricot Glaze
A light spring cheesecake in a shortbread crust that works
as a dessert or a special brunch offering.
