Mani Niall is a highly resourceful food industry entrepreneur with a widerange of experience: natural baking guru, cookbook author and product development consultant to name a few. In the early 1990s, he opened Mani’s Bakery in Los Angeles, combining great taste and healthful ingredients; the recipes can be found in the book Sweet & Natural Baking. Consulting for the Honey Board, he immersed himself in the world of bees and varietal honey, writing his next cookbook, Covered in Honey. Mani's expertise with natural ingredients like agave syrup, whole grains and tea keep him busy on consulting projects. He is the Executive Chef for Just Desserts, the Bay Area wholesaler, and released a menu of sweet treats including trendy cupcakes, chocolate-dipped madeleines and, everyone's favorite, brownie bites.
