Golden Corn Bread
- 1 cup yellow corn meal
- 1 cup sifted unbleached white flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 4 teaspoons Clabber Girl Baking Powder
- 1 egg
- 1 cup milk
- 1/4 cup shortening, soft
Sift together dry ingredients into bowl; add egg, milk, and shortening. Beat with egg beater until smooth, about 1 minute. Do Not Overbeat. Bake in a greased 8-inch square pan or greased muffins pans in hot oven (425°F.) for 20 to 25 minutes. Serve warm with butter or covered with creamed chicken, fish or meat.
