Walnut and Heath Bar Chip Mandelbrot

24 to 36 slices


1 1/2 cups sugar
1 cup vegetable oil
4 eggs
3 tablespoons orange juice
2 1/2 teaspoons vanilla
3 1/2 cups all-purpose flour
1/4 teaspoon salt
2 1/2 teaspoons Clabber Girl Baking Powder
1/4 teaspoon cinnamon
1 1/2 cups chocolate chips
1 cup very finely chopped walnuts
1 cup Heath Bar Chips*
*or similar kosher confection


Preheat oven to 350 F. Line a baking sheet with parchment paper.

In a large bowl, whisk together sugar and oil. Stir in eggs, then orange juice and vanilla. Stir in flour, salt, Clabber Girl Baking Powder, cinnamon, walnuts and Heath Bar chips to make a very thick batter.

Spread batter out onto prepared baking sheet in one or two smaller logs, about 3-5 inches wide and 10-14 inches long. If you think this batter will crowd your baking sheet, put half the batter on one sheet, the other half on a second sheet.

Bake until top seems dry (20-25 minutes). Remove from oven and let cool ten minutes. Meanwhile, reduce oven heat to 325 F. Using a serrated knife, slice log in slices, about 3/4 inch thick.

Place mandelbrot on baking sheet and into oven and bake to dry out, ten minutes each side, turning over mid way.


This is a classic mandelbrot made not so classic.
