Pareve Coconut Macaroons Dipped In Chocolate
Makes 12-20, depending on size
- 2 egg whites
- 2 teaspoons pure vanilla extract
- pinch salt
- 2/3 cup sugar
- 1 1/3 cup sweetened shredded coconut
- 4 ounces, semi-sweet chocolate ,melted and cooled
Cover a cookie sheet with parchment paper.
Beat egg whites, vanilla and salt until soft peaks form. Slowly add in the sugar and beat until stiff peaks form. Fold in coconut gently. Drop by teaspoonful onto cookie sheet. Bake at 350 F for 20 minutes.
Melt the chocolate. Dip half of each macaroon into chocolate and put on a parchment paper lined cookie sheet to allow chocolate to set.
