- 1/2 cup canned pumpkin
- 1 1/2 teaspoons pumpkin pie spice
- 1 1/4 cups sifted all-purpose flour
- 1 1/2 teaspoons Clabber Girl Baking Powder
- 1/2 teaspoon salt
- 3/4 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup shortening
- 2/3 cup granulated sugar
- 1 teaspoon orange extract
- 1 egg
Preheat oven to 375 degrees F.
In a small bowl combine pumpkin and spice; set aside. In a large bowl, combine flour, baking powder and salt. Stir in raisins and nuts. In a large bowl, cream together shortening and sugar. Add extract and egg. Blend in pumpkin mixture. Add flour mixture and mix until well blended.
Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 375 degrees F. about 15 minutes. Remove cookies from sheets immediately and cool on cooling racks. Frost or decorate as desired.
Makes 4 dozen cookies.
Advertised as Halloween Pumpkin Cookies in 1958, these easy drop cookies would be great any time of year!
