Apple Cinnamon Coffee Cake

1 c. brown sugar (firmly packed)

1/4 c. all-purpose flour
1 tsp. cinnamon
1/4 c. butter
1 c. chopped Granny Smith apples

Cake Batter:
3/4 c. brown sugar (firmly packed)
1/2 tsp. apple pie spice
1/2 c. butter
3 eggs
3 c. Clabber Girl Baking Mix (baking mix recipe available in recipe box)
1 c. buttermilk
1 tsp. vanilla


Preheat oven to 350 degrees F.

Cinnamon-Crumb Mixture Preparation:
Combine brown sugar, flour, and cinnamon. Cut in butter until mixture is crumbly; Add chopped Granny Smith apples and toss until mixed. Set aside.

Cake Preparation: Cream together brown sugar, apple pie spice, and butter. Add eggs one at a time, beating well after each addition. Alternately add Clabber Girl Baking Mix, and buttermilk. Stir in vanilla. Batter will be thick.

Spoon half the batter into well-greased Bundt or tube pan. Sprinkle half the cinnamon-apple crumb mixture over top. Add remaining batter and top with remaining cinnamon-apple crumb mixture.

Bake for 1 hour. Allow cooling for 5 minutes. Invert Bundt or tube pan releasing cake onto serving platter. Continue to cool and slice.
