Zucchini Bread


3 eggs
2 cups granulated sugar
1 cup vegetable oil
3 cups Baking Mix
2 cups shredded zucchini
3 tsp. cinnamon
1 cup chopped walnuts


Preheat conventional oven to 350 (convection oven 325) degrees. Beat eggs, sugar and oil. Stir in shredded zucchini. Add Baking Mix and cinnamon and nuts. Pour into 12x9x2-inch well-greased baking pan. Bake in conventional oven 60-75 minutes (convection oven 30 to 35 minutes.)
