Chocolate Swirl Cheesecake
2 teaspoons vanilla
1 cup sugar
1/2 cup Baking Mix
2- 8 oz. packages cream cheese
(cut into 1/2 inch cubes and softened)
1/4 cup unsweetened cocoa
Preheat oven to 350°F. Grease pie plate (9 x 1 1/4inches). Beat vanilla, eggs, sugar, and baking mix on high speed for 30 seconds. Add cream cheese.
Beat on high speed 1 minute. Divide mixture in half. Add cocoa to half of the mixture. Beat on high for 1 minute. Alternately spoon plain and chocolate mixtures into pie plate, swirl with a spatula. Bake uncovered 25 minutes or until knife inserted in center comes out clean; cool. Sprinkle top with raspberries if desired. Cover and refrigerate remaining cheesecake.
