Chocolate Orange Biscotti
Yields about 60 biscotti
WEIGHT MEASURE Granulated Sugar 1lb 6oz Unsalted Butter 10 oz Liquid eggs 10 oz Dried orange peel 1/4oz Almond extract 1/6 oz All-purpose flour 1lb 9oz Clabber Girl Baking Powder 1/4 oz Salt 1/8 oz Mini Chocolate Chips 8oz
Preheat oven to 350°F.
Combine sugar and butter in bowl. Mux at 2nd speed of 3-speed mixer until blended.
Add eggs, orange peel, and almond extract to bowl and mix at 1st speed until blended.
Sift flour, Clabber Girl Baking Powder and salt together and add to mixture. Mix at 1st speed until well blended.
Stir in chocolate chips.
Scale doughinto four pieces weighing 1lbs 3ozs. each. Roll each piece of dough into 14 in. logs. Place on parchment-lined sheet pans 5ins. apart. Bake at 350° F for 20 minutes. Cool on racks for 10 minutes. Using a serrated knife, cut each roll into3/4 in. thick slices. Lay slices flat on parchment-lined sheet pan. Bake at 350°F for 10 minutes, turn slice over and bake for an additional 10 minutes. Cool on a rack and store in airtight containers.
