Cinnamon Swirl Coffee Cake
10 to 12 servings
Ingredients:
- Cake Batter:
- 1/2 cup butter
- 3 eggs
- 3 cups Baking Mix
- 3/4 cup firmly packed brown sugar
- 1/2 teaspoon apple pie spice
- 1 cup buttermilk
- 1 tsp. vanilla
- Cinnamon Crumb Mixture:
- 1 cup firmly packed brown sugar
- 1/4 cup all-purpose flour
- 1 tsp. cinnamon
- 1/4 cup butter
Instructions:
Preheat oven to 350 degrees F.; grease a fluted tube pan; set aside.
Cinnamon Crumb Mixture: Combine brown sugar and flour; add cinnamon. Cut in butter until mixture is crumbly; set aside.
Cake Batter: In a large bowl, cream together butter and eggs. Combine Baking Mix, brown sugar and apple pie spice; blend thoroughly. Add buttermilk alternately with flour mixture. Stir in vanilla. Batter will the thick. Spoon half the batter into the tube pan; sprinkle half the cinnamon crumb mixture on top of batter. Add remaining batter, and top with remaining crumb mixture.
Bake for 1 hour.
Cool 5 minutes: inverton tocake plate. Cool and slice.
