Cinnamon Swirl Coffee Cake
10 to 12 Servings
1/2 c. butter
3 c. Clabber Girl Baking Mix (mix recipe available in Clabbergirl.com recipe box)
3/4 c. brown sugar (firmly packed)
1/2 tsp. apple pie spice
1 c. buttermilk
1 tsp. vanilla
Cinnamon Crumb Mixture:
1 c. brown sugar (firmly packed)
1/4 c. all-purpose flour
1 tsp. cinnamon
1/4 c. butter
Preheat oven to 350 degrees F. Grease a fluted tube pan; set aside.
Cinnamon Crumb Mixture: Combine brown sugar, flour and add cinnamon. Cut in butter until mixture becomes crumbly; set aside.
Cake Batter: In a large bowl, cream together butter and eggs. Combine Clabber Girl Baking Mix, brown sugar and apple pie spice; blend thoroughly. Add buttermilk alternately with flour mixture. Stir in vanilla. Batter will be thick.
Spoon half the batter into the tube pan; sprinkle half the cinnamon crumb mixture on top of batter. Add remaining batter and top with remaining crumb mixture.
Bake for 1 hour. Allowing cooling for at least 5 minutes then invert tube pan to release cake onto serving plate. Cool and slice.
