Candied Yams

6 servings


3 lbs yams or sweet potatoes (about 6)
Vegetable cooking spray
11/2 cups firmly packed brown sugar
1/2 cup chilled butter cut into small pieces
1 tablespoon grated lemon peel
2 teaspoons ground cinnamon
1/4 cup water
2 tablespoons fresh lemon juice
2 teaspoons vanilla extract


In a large saucepan add sweet potatoes and enough water to cover potatoes. Bring to a boil; cover and cook about 20 minutes or until potatoes can be pierced with a fork. Peel and slice potatoes. Layer potatoes, sugar and butter in a 13x9-inch baking pan. Combine remaining ingredients, mixing well. Pour mixture over potatoes. Cover and bake 35 minutes; uncover and bake an additional 15 minutes or until tops are lightly browned.
