Cinnamon Apple Coffeecake
Serves 8 to 12
- Cake Batter:
- 3/4 cup firmly packed brown sugar
- 1/2 cup butter
- 3 eggs
- 3 cups all-purpose flour
- 3 teaspoons Clabber Girl Baking Powder
- 1/2 teaspoon salt
- 1/2 teaspoon apple pie spice
- 1 cup buttermilk
- 1 teaspoon vanilla
- Cinnamon-crumb mixture:
- 1 cup firmly packed brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon cinnamon
- 1/4 cup butter
- 1 cup Granny Smith apples, chopped
Preheat oven to 350 degrees F.; grease and flour a tube pan or bundt pan.
Cake: Cream together sugar and butter. Add eggs one at a time, blending well after each addition. In a separate bowl, combine flour, baking powder, salt and apple pie spice; blend well and add to butter mixture alternately with buttermilk. Stir in vanilla. Batter will be thick.
Cinnamon Crumb Mixture: combine sugar, flour and cinnamon. Cut in butter until mixture is crumbly; stir in chopped apples.
To bake: Pour 1/2 of the cake batter into the prepared pan; pour 1/2 of the crumb mixture on top. Top with remaining cake batter followed by the balance of the crumb mixture.
Bake at 350 degrees F. for 60 minutes, until cake tests done. Cool 5 minutes in pan, then invert on plate to serve.
Cool and slice.
