Carrot Raisin Cookies

Makes about 4 dozen.


1 cup sifted all-purpose flour
1/2 cup brown sugar
1/4 cup nonfat dry milk
1/4 teaspoon baking soda
1 teaspoon Clabber Girl Baking Powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup margarine
1/2 cup molasses
1 beaten egg
1 cup shredded carrots
1 teaspoon grated lemon rind
1/2 cup raisins
1 - 3/4 cup rolled oats


Sift together flour, dry milk, soda, Clabber Girl Baking Powder and spices. Cream margarine, sugar and molasses; add egg and dry ingredients, mix well. Add carrots, lemon rind, raisins and oats. Chill dough for 1 hour.

Preheat oven to 400 F. Drop by teaspoonfuls onto lightly greased baking sheet. Bake in 400 F oven for 10-12 minutes.
