Fresh Apple Quick Bread
Makes one large loaf.
- 1/2 cup unsalted butter
- 1 cup sugar
- 2 eggs
- 1 1/2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons Clabber Girl Baking Powder
- 3 tablespoons yogurt or buttermilk
- 1 cup chopped, unpeeled apples (Royal Gala or Pink Lady are terrific in this)
- 1/2 cup chopped pecans
- Sugar and cinnamon for dusting
- Slivers of apple slices
Preheat oven to 350 F. Line a baking sheet with parchment paper. Generously spray a 9 by 5 inch loaf pan with non-stick cooking spray and place on baking sheet.
In a mixer, cream the butter and sugar until fluffy. Add in eggs and vanilla and blend well, Fold in flour, cinnamon, salt, soda, Clabber Girl Baking Powder and yogurt (or buttermilk). Blend well and fold in apples and pecans.
Spoon into pan and dust with sugar; inset a row of thin apples slices down the center.
Bake until done, about 50-60 minutes or until cake has a crack in center, and cake tester comes out clean.
Apples and pecans in a buttery little loaf that bakes up golden. A dusting of sugar before baking and some slivers of green or red apple inset in the batter makes this a wonderful slicing cake. Just pass around slices on a platter, while relaxing in your backyard succot or at a friend's.
