Red Velvet Cake II


2 1/2 cup all purpose flour
1 1/2 cup sugar
2 tablespoons cocoa
1 teaspoon baking soda
1 teaspoon salt
2 eggs, slightly beaten
1/2 cup oil
1 cup buttermilk
2 ounces red food coloring
2 teaspoons vanilla
Cream Cheese Frosting


In a large bowl, combine dry ingredients; mixing well. Combine eggs, oil, buttermilk and food coloring in small bowl; mixing well. Add egg mixture to flour mixture; mix well.
Pour batter equally into 3 greased and floured 8-inch cake pans. Bake at 350 degrees F. for 25-30 minutes or until done. Cool 10 minutes. Remove from pans, frost with Cream Cheese Frosting.
