Chocolate Walnut Biscotti
1 Dozen Biscotti
6 tbsp. butter *
1 c. granulated sugar
2 c. all-purpose flour
1/2 c. cocoa powder
1 tsp. Clabber Girl Baking Soda
1/2 tsp.Clabber Girl Baking Powder
1/4 tsp. salt
1 c. walnuts (chopped)
1 c. chocolate chips (semisweet)
1 tsp. confectioners' sugar
*Note: Do not substitute margarine or shortening for the butter. The butter helps give biscotti its unique crispiness.
In a large bowl, cream butter and sugar together then add eggs. In a separate bowl, add flour, Clabber Girl Baking Soda, cocoa, salt, and Clabber Girl Baking Powder then combine. Add dry mixture to the creamed mixture and mix thoroughly. Add chopped walnuts and chocolate chips and mix until evenly distributed.
Preheat oven to 350 degrees F. Grease and flour cookie sheet.
With floured hands shape dough into two flattened logs approximately 12-inches long and sprinkle with confectioners' sugar.
Bake for 35 minutes, remove, and cool on baking sheet until warm (about 10 minutes). Transfer to cutting board and cut into 3/4-inch slices. Arrange pieces with cut sides down on baking sheet and bake until crisp, about 8 to 10 minutes.
