Roasted Pork Loin with Warm Wheat Berry Salad

Serves 4


20 ounces boneless, skinless pork loin
For the wheat berries
1 cup cooked wheat berries
1/4 cup green onions, white and green parts, chopped
1/4 cup julienne carrots, ½-inch long
2 teaspoons balsamic vinegar, good quality
1 teaspoon fresh Italian parsley, stemmed and chopped


Preheat the oven to 350º F. Over high heat sear the pork loin and brown on all sides. Roast until pork reaches 130º F. remove from the oven and let rest for 15 minutes.

Warm the wheat berries with a little water in a saucepan over medium heat, add the remaining ingredients, season to taste with salt and pepper.

Divide the warm salad over four warm serving plates. Slice the pork thin, divide equally into four portions. Layer over the salad like shingles, serve immediately
