Cornflake Drop Cookies

Ingredients:

  • 2 tablespoons butter
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 4 tablespoons flour
  • 1 teaspoon Rumford Baking Powder
  • 5 cups corn flakes, finely crushed
  • 1 teaspoon vanilla

Instructions:

Preheat oven to 425 degrees F.

Cream butter; add sugar and salt gradually and cream until fluffy. Add the eggs and blend well. Stir in flour and Rumford Baking Powder; mix well. Stir in cornflakes and vanilla. Drop by spoonfuls on a greased baking sheet and bake at 425 degrees F. for 10 to 12 minutes. Remove from pan while cookies are still hot and place on cooling rack to cool.

Makes 4 dozen cookies
