Easy One Bowl Blackberry Oatmeal Bars
- 2 cups all purpose flour
- 1 1/2 teaspoons Clabber Girl Baking Powder
- 1 cup quick-cooking oats
- 3/4 cup brown sugar
- 1/4 tsp. ground cinnamon
- 3/4 cup butter, softened
- 1 12-oz. jar seedless blackberry jam or preserves
Heat oven to 400°F. Grease 9x9x2 baking dish; set aside. Combine flour, Clabber Girl Baking Powder, oats and brown sugar in a large bowl. Cut in butter until mixture is coarsely crumbled. Work the dough with your hands until it just holds together. Press half the baking mixture into pan. Spread jam over batter, leaving a gap around the edges. Press remaining baking mixture into fruit, covering completely. Spray top layer with cooking spray. Bake 30 minutes or until golden brown.
Cut into 24 bars. Note: Other flavors of jam or preserves can be used.
