Red Beans and Rice with Spicy Sausage


  • 1 pound dried red beans
  • 1/2 pound smoked turkey necks
  • 2 cups chopped onion
  • 1/2 cup chopped garlic
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 pound spicy or mild sausage, cut into bite-sized pieces
  • Hot cooked rice


Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain. Cover beans with water and add smoked turkey, onion, garlic, salt, pepper and thyme; bring to a boil. Cover, reduce heat, and simmer over low heat 2 hours, stirring occasionally. Add sausage and cook uncovered over low heat 45 minutes or until sausage is cooked and beans are tender. Serve over rice.
