Curried Chicken Salad


1 cup good quality mayonnaise
1 tablespoon fresh lemon juice
2 teaspoons curry powder
1 teaspoon salt
1/2 teaspoon pepper
2 pounds cooked chicken, skinned, boned and chopped
3 cups red and green seedless grapes, halved
1/2 cup chopped green onion
1 cup toasted chopped pecans
6 cups Mixed Salad Greens


Combine first 5 ingredients in a large bowl; mix well. Add chicken, grapes and green onion, tossing gently to coat. Cover and chill at least one hour. Stir in pecans just before serving. On 4 serving plates, arrange 1 1/2 cups salad greens, top greens with chicken salad.

Yield: 4 servings
