Egg Nog Thumbprint Cookies

40 Cookies


3/4 c. butter (or margarine)
1/2 c. sugar
1/4 c. brown sugar (packed)
2 c. all-purpose flour
1/2 tsp. Clabber Girl Baking Powder
1 egg
1/2 tsp. vanilla extract
1/4 tsp. salt

1/4 c. butter (margarine)
1 c. confectioners' sugar
1 tbsp. rum or rum extract
1/8 tsp. ground nutmeg


Cookie Dough Preparation: Cream 3/4 c. butter with both varieties of sugars, egg, vanilla, and salt. Mix well. In a separate bowl; combine flour and Clabber Girl Baking Powder and incorporate dry mix into creamed mixture; mix well. Chill for 1 hour or until dough is manageable.

Preheat oven to 350 degrees F.

Shape into 1-inch balls and place on ungreased cookie sheets, making thumbprint wells in center of each. Bake for 12 minutes. If wells close during baking time, make new ones as soon as you remove the cookies from the oven. Cool on wire rack.

Filling Preparation:
Combine filling ingredients and spoon or pipe into cooled cookies. Sprinkle with nutmeg for garnish.
