Egg Nog Thumbprint Cookies
Ingredients:
- 3/4 cup butter or margarine
- 1/2 cup sugar
- 1/4 cup packed brown sugar
- 2 cups all-purpose flour
- 1/2 teaspoon Clabber Girl Baking Powder
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Filling:
- 1/4 cup margarine
- 1 cup confectioners' sugar
- 1 tablespoon rum or rum extract
- 1/8 teaspoon ground nutmeg
Instructions:
Cream 3/4 cup butter with sugars and egg, vanilla and salt. Mix well. In a separate bowl combine flour and Clabber Girl Baking Powder, stir into creamed mixture; mix well.
Shape into 1 inch balls and place on ungreased cookie sheets, making thumbprint wells in center of each. Bake at 350 degrees F for 12 minutes.
Cool on wire rack.
Filling:
Combine filling ingredients and spoon into cooled cookies. Sprinkle with nutmeg for garnish.
Makes 40 cookies
