Garlic Roasted Pork Loin
One (3- pound) pork loin roast
3-4 garlic cloves, peeled and thinly sliced
1 teaspoon kosher salt
1/2 teaspoon black pepper
Heat oven to 350`F. Place roast on a rack in a roasting pan. Using a paring knife, cut slits into the roast and stuff with garlic slices. Sprinkle meat with combined salt and pepper. Roast for about 1-1/2 hours or until meat reaches 155`F internal temperature. Let rest before slicing.
