Cranberry Orange Muffins
Makes 1 dozen muffins
- 2 cups all purpose flour
- 2 teaspoons Clabber Girl Baking Powder
- 1 teaspoon baking soda
- 2 teaspoon grated orange peel
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 cup orange juice
- 1 teaspoon vanilla
- 2 eggs, slightly beaten
- 2 cups fresh or frozen cranberries, coarsely chopped
Heat oven to 350 degrees F. Grease muffin tins.
In a large bowl, sift together flour, baking powder, soda, orange peel and salt; set aside.
In a separate bowl cream together sugar, butter, orange juice and vanilla until fluffy. Add eggs, one at a time, beating well after adding each. Add creamed mixture to flour mixture and mix just until ingredients are combined well.
Fold in cranberries. Pour batter into prepared muffin tins.
Bake 18-20 minutes or until wooden pick inserted in center comes out clean.
