Bubbie Style Roast Chicken
Ingredients:
- 1 3 1/2 - 4 pound chicken, cut in 8ths
- 1 can tomato soup
- 1/2 cup ketchup
- 1/3 cup Italian salad dressing
- 1 cup water
- 1/3 cup red or white wine
- 1-2 tablespoons garlic powder
- 2 tablespoons sweet paprika
- 1 package dry onion soup mix
- Salt, pepper to taste
- 1 large onion, finely sliced
- 1/2 finely sliced mushrooms
Instructions:
Preheat oven to 350 F.In a large roasting pan that comfortably holds the chicken parts, place the chicken pieces. Drizzle on the tomato soup, ketchup, and salad dressing. Drizzle water and wine in hollows around chicken pieces.
Season the chicken pieces with the garlic, paprika and scatter the onion soup mix on top. Dust with salt and pepper and top with mushrooms and onions. Bake and then baste, turning chicken pieces once, mid way through cooking the dish, for about 30 minutes and then finish the dish with the skin side of the chicken facing up. Continue roasting until chicken is done, basting once in awhile, another 45 minutes (it is about 1 1/2 hours in total).
If the dish starts to dry out (there should be some gravy or pan juices forming as it cooks), add some more water or chicken broth. Cover lightly with foil and reduce temperature to 300 F to keep warm until serving.
