Double Chocolate Chip Passover Brownies


1/2 cup unsalted Passover margarine, softened or oil
3/4 cup cocoa
1 cup sugar
2 eggs
1/3 cup matzoh cake meal
2 teaspoons instant coffee
1/3 cup ground walnuts
1/2 cup chocolate chips


Preheat oven to 350 F. Line a baking sheet with parchment paper. Spray an 8 inch layer or square cake pan with non-stick cooking spray and place on the pan.

In a mixer bowl, blend the margarine with the cocoa and then stir in the sugar. Add in eggs, matzoh cake meal, coffee, walnuts, and chocolate chips and blend well. Spoon into pan. Bake until just set, 25 minutes. Cool well, and cut into small squares. (Freezes well)

Makes 16 small brownies


No one refuses brownies, especially at Passover, when a good, pure chocolate brownie is the perfect snacky dessert, after a Seder. The ground walnuts add a lovely extra bouquet of buttery nutty flavor.
