Rice Krispie Mandelbrot

Ingredients:

  • 1 cup sugar
  • 1 cup corn oil
  • 1 tablespoon honey
  • 3 cups all-purpose flour
  • 1/8 teaspoon salt
  • 2 teaspoons Clabber Girl Baking Powder
  • 3 eggs
  • 2 teaspoons pure vanilla
  • 3 cups Rice Krispies
  • 3/4 cup slivered almonds
  • 1/2 cup raisins, plumped and drained, optional

Instructions:

Preheat oven to 350 F. Stack two baking sheets together and line the top one with parchment paper. In a mixer bowl, blend the sugar and corn oil well. Blend in the eggs and vanilla and mix well. Fold in the flour, salt, baking powder and then the Rice Krispies, almonds and raisins. Divide dough in three and make three logs. Place on baking sheet. Dust with cinnamon.

Bake until firm and dry to the touch, about 30-40 minutes. Reduce temperature to 300 F. Cool logs well and then carefully cut into 3/4 inch slices. Replace on baking sheet and bake, turning once, about 20 minutes.

Makes 3-4 dozen

Comments:

A crunchy, simple, homey mandelbrot or biscotti. The Rice Krispies give it a sense of nuttiness.
