Mincemeat Drop Cookies
Makes about 2 1/2 dozen cookies
- 1/4 cup shortening
- 1/2 cup sugar
- 1 egg
- 1 cup mincemeat
- 1 1/4 cups sifted flour
- 2 teaspoons Rumford Baking Powder
- 1/4 teaspoon salt
Preheat oven to 400 degrees F.
In a large bowl, cream shortening, add sugar gradually, creaming until light and fluffy. Add egg and beat well. Fold in mincemeat.
In a separate bowl,sift together flour, Rumford Baking Powder and salt. Add to creamed mixture, stirring until well blended.
Drop by teaspoonfuls on greased baking sheet and bake in moderately hot oven (400° F.) about 10 minutes.
