Self Rising Flour Decadent Chocolate Fudge Cookies
- 4 ounces (1 cup) chopped semi-sweet chocolate
- 1 egg
- 1/2 cup unsalted butter
- 1 1/4 cup light brown sugar, firmly packed
- 1 2/3 cup self-rising flour (baking powder SRF only for a tender chocolate taste: soda version for dark chocolate)
- 1 cup chocolate chips
- Garnish: Chocolate Chunks
Instructions:Preheat oven to 400 F. Place oven shelf in middle of oven. Line a baking sheet with parchment paper. Melt the chocolate and set aside to cool.
In a mixer, cream the butter and brown sugar until well-blended. Add in the self-rising flour, the melted chocolate and chocolate chunks. Blend well. Shape into 5-6 large balls of dough and place on sheet.
Bake until cookies are spread and cracked, about 12-14 minutes. As soon as they come out of the oven, put a tablespoon or so of chocolate chunks or pieces in their centers and allow to melt.
Makes 6 cookies.
These are huge cookies you need to split in half and share. They are crackly on top and dense in the center. Self-rising flour makes these treats as quick as you please.
