Oatmeal Carrot Cookies

Makes about 36 cookies


  • 1 cup all-purpose flour
  • 1 cup quick-cooking rolled oats
  • 1 tsp Clabber Girl Baking Powder
  • 1/4 tsp baking soda
  • 1/2 cup margarine, softened to room temperature
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded carrot
  • 1/2 cup raisins


In a large bowl, combine flour, rolled oats, Clabber Girl Baking Powder and baking soda; set aside. In a medium bowl cream together margarine, honey, vanilla and egg; add to dry mixture and stir until combined. Add chopped nuts, carrot and raisins.

Drop by teaspoonful onto lightly greased cookie sheet. Bake at 350 degrees F for 8 to 12 minutes. Cool on wire racks.
