Peanut Butter Cookies
- 1/2 cup peanut butter
- 1/4 cup shortening
- 1/4 cup margarine or butter
- 1 1/3 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon Clabber Girl Baking Powder
- 1/2 teaspoon baking soda
In a large mixing bowl beat peanut butter, shortening, and margarine with an electric mixer about 30 seconds or till combined.
Add half of the flour, the brown sugar, 1/2 cup sugar, egg, vanilla, Clabber Girl Baking Powder, and baking soda. Beat till thoroughly combined, scraping sides of bowl occasionally. Beat or stir in the remaining flour. If necessary, cover and chill dough till easy to handle.
Shape dough into 1-inch balls. Place 2 inches apart on an ungreased cookie sheet. Using the tines of a fork dipped in the additional sugar, flatten balls to about 1/4-inch thickness by pressing fork in two directions to form crisscross marks.
Bake in a 375° oven for 9 to 11 minutes or till edges are lightly browned. Transfer to a wire rack; cool. Makes about 48.
