Sugar 'N' Spice Cookies
- 1/2 cup butter
- 1/4 cup shortening
- 3 cups all-purpose flour
- 1 cup packed brown sugar
- 1 1/4 teaspoons ground cinnamon or 1 teaspoon ground cardamom
- 3/4 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon Clabber Girl Baking Powder
- 1/8 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/4 cup milk
- 1 egg yolk
- 1 1/2 teaspoons finely shredded lemon peel (optional)
- 1/2 teaspoon vanilla
Generously grease a cookie sheet. Set aside.
In a large mixing bowl beat butter and shortening with an electric mixer on medium to high speed about 30 seconds or till softened. Add half of the flour, the brown sugar, cinnamon, ginger, nutmeg, Clabber Girl Baking Powder, salt, and cloves. Add half of the milk, the egg yolk, lemon peel (if desired), and vanilla.
Beat till thoroughly combined, scraping sides of bowl often. Beat or stir in remaining flour and remaining milk. (If necessary, knead in last portion of flour by hand).
Shape the dough into 1- to 1 1/4-inch balls. Place 2 inches apart on the prepared cookie sheet. Using the floured bottom of a glass or floured cookie stamp, flatten balls to 1/4-inch thickness. If desired, trim cookies with a scalloped or round cookie cutter.
Bake in a 375° oven for 8 to 10 minutes or till edges are lightly browned. Cool on cookie sheet for 1 minute. Transfer to a wire rack; cool. Makes 48 to 60.
