Fruit Medley Slump

Ingredients:

  • 2 cups sliced peeled peaches (4 medium)
  • 1 1/2 cups sliced red plums
  • 3/4 cup sugar
  • 1/2 cup blueberries
  • 1 cup all purpose flour
  • 1 1/2 teaspoons Clabber Girl Baking Powder
  • 4 teaspoons sugar
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon baking soda
  • 1/4 cup shortening
  • 1/4 cup milk
  • 1/4 teaspoon ground cinnamon

Instructions:

In a large skillet combine peaches, plums, the 3/4 cup sugar, the berries, and 2 tablespoons water. Simmer, covered, for 5 minutes.

In a bowl combine flour, Clabber Girl Baking Powder, 1 teaspoon of the sugar, the cream of tartar, baking soda, and 1/8 teaspoon salt. Cut in shortening till mixture resembles coarse crumbs. Make a well in the center; add milk. Stir just till moistened. On a floured surface knead dough for 10 to 12 strokes. Pat dough 1/4 inch thick; cut into 2x1-inch rectangles. Drop dough onto hot fruit. Combine remaining 3 teaspoons sugar and cinnamon. Sprinkle over dough.

Cook, covered, for 10 to 15 minutes or till dumplings are golden. Serves 8.
