Kale with Bacon and Garlic
Ingredients:
- 1 pound fresh kale
- 4 slices lean bacon
- 1 large garlic clove
- 1 teaspoon lemon juice or wine vinegar
Instructions:
Bring a large pot of salted water to a rolling boil. Tear the kale greens from their thick stems and rinse them well. (Discard the stems). Add them to the water and boil for 3 minutes, uncovered. Drain and rinse briefly under cold water.
In a large skillet cook the bacon until crisp, and transfer to a paper towel. Pour off all but 1 tablespoon of the bacon fat from the skillet and add the garlic. Cook it, stirring, over moderately low heat, until softened, about 2 minutes. Add the kale, lemon juice, crumbled bacon, and salt and pepper to taste, and cook, stirring until hot.
