Sugar-Free Pumpkin Pie
Ingredients:
- 2 eggs, slightly beaten
- 1 15-oz. can pumpkin
- non-nutritive sweetner (powdered) equal to 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1 12-oz. can evaporated skim milk
- 1 teaspoon vanilla
- 1 9-inch deep dish pie shell
Instructions:
Combine ingredients in order given, mixing well. Pour into unbaked pie shell. Place pie on cookie sheet in a preheated 375° oven. Bake for 50 minutes or until a toothpick inserted into center comes out clean.
Makes one 9-inch pumpkin pie
