Makes 30 large (or 60 small)
- KNISH DOUGH
- 5 cups all purpose flour
- 2 1/2 teaspoons salt
- 1/4 cup sugar
- 2 teaspoons Clabber Girl Baking Powder
- 1 cup warm water
- 3 eggs
- 3/4 cup oil
- POTATO FILLING
- 2 cups mashed potatoes
- 1 egg
- 3 tablespoons oil, about
- 2 large onions, diced and sauté in oil til browned
- salt, pepper, to taste
- Non stick cooking spray or a beaten egg
Prepare dough by mixing everything together and knead gently. Wrap and refrigerate while preparing filling.
Prepare mashed potatoes then mix with salt, pepper, and onions fried in oil.
Preheat oven to 350 F.
Divide dough in two. Roll out each section to a 12 by 12 inch rectangle. Smear on half the mashed potatoes and roll up into a log. Cut in 15 sections.(each portion of filled dough).
Turn cut side down and press slightly down, gather top cut edge inwards - to form a flower like opening or slight closure (almost as a rose is semi closed)
Place on a silicone lined baking sheet. Spray knishes with non stick cooking spray or brush with beaten egg. Bake until golden brown, about 30-40 minutes.

There are many versions of this standard pastry wrapped mashed potato entrée. This is pretty traditional.
