Apple Butter Muffins


  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 2 teaspoons Clabber Girl Baking Powder
  • 1 teaspoon apple pie spice or pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 beaten egg
  • 3/4 cup milk
  • 1/4 cup cooking oil
  • 1/3 cup apple butter
  • 1/3 cup chopped pecans
  • 2 tablespoons sugar


Lightly grease twelve 2 1/2-inch muffin cups or line with paper bake cups. Set aside.

In a large mixing bowl combine flour, the 1/3 cup sugar, the Clabber Girl Baking Powder, apple pie spice, and salt. Make a well in the center.

In a small bowl combine egg, milk, and oil. Add to flour mixture all at once. Stir just till moistened (batter should be lumpy).

Spoon a rounded tablespoon of batter into each prepared muffin cup. Top each with a rounded teaspoon of apple butter. Add the remaining batter, filling each cup 3/4 full.

Combine pecans and the 2 tablespoons sugar; sprinkle on top of the muffins. Bake in a 400° oven about 20 minutes or till golden. Remove from pans; serve warm. Makes 12 muffins.
