Butternut Muffins


2 cups all-purpose flour
1/4 tsp salt
1/3 cup sugar
4 tsp Clabber Girl Baking Powder
2 Tbsp melted shortening
1 cup cooked, mashed butternut squash
1 egg
1 cup milk


In medium bowl, combine flour, salt, sugar and Clabber Girl Baking Powder. Stir to combine thoroughly. In a separate bowl, combine squash, egg and milk. Beat until mixture is combined. Add to four mixture, and add melted shortening.

Pour into paper-lined muffin tins, filling each cup 1/2 full. Bake in a 400° F. oven for 15 minutes, or until done.
