Pear-Yogurt Muffins

Ingredients:

  • 2 cups sifted all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons Clabber Girl Baking Powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup yogurt - unflavored
  • 1 egg, slightly beaten
  • 1/4 cup oil
  • 1 - 16 oz. can pears, drained and diced

Instructions:

Sift dry ingredients into bowl.
Blend yogurt, egg and oil in small bowl
Add to flour mixture with pears, stirring until just moistened.
Fill greased muffin cups 2/3 full

Bake at 400° F. for 20 to 25 minutes, or until golden brown.

Yield: 12 servings
