Banana Blueberry Loaf

Ingredients:

  • 1 cup sugar
  • 1/2 cup oil
  • 1 cup (2 medium) mashed ripe bananas
  • 1/2 cup low-fat plain yogurt
  • 1 tsp. vanilla
  • 2 eggs
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. Clabber Girl Baking Powder
  • 1 cup fresh or frozen blueberries (don't thaw)

Instructions:

Heat oven to 350°F. Grease and flour a large loaf pan (9.2" x 5.2" x 2.7"). In a large bowl, combine sugar and oil; beat well. Add bananas, yogurt, vanilla, and eggs; blend well.

Add flour, baking soda, salt and Clabber Girl Baking Powder; stir just until dry ingredients are moistened. Gently stir in blueberries. Pour into greased and floured loaf pan.

Bake at 350°F for 40-50 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes. Flip out onto cooling rack. Serve warm or cool.
