Banana Blueberry Loaf


1 c. sugar
1/2 c. oil
1 c. mashed ripe bananas  (2 medium sized bananas)
1/2 c. low-fat plain yogurt
1 tsp. vanilla
2 eggs
2 c. all-purpose flour
1 tsp. Rumford Baking Soda
1/2 tsp. salt
1 tsp. Clabber Girl Baking Powder
1 c. fresh or frozen blueberries (don't thaw)


Preheat oven to 350 degrees F. Grease and flour a large loaf pan (9 X 5 X 2.5-inch).

In a large bowl, mix the sugar and oil together. Add bananas, yogurt, vanilla, and eggs; blend well.

Add flour, Rumford Baking Soda, salt, and Clabber Girl Baking Powder; stir until dry ingredients are just moistened. Gently stir in blueberries. Pour into greased and floured loaf pan.

Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes then flip loaf out onto cooling rack.


May be served warm or cool.
