Cheesy Potato Rounds
- 1 pre-baked potato
- 1/8 cup of shredded cheese
- Cajun or other seasoned salt
- chives for garnish.
- oil spray(garlic flavored or butter flavored is good).
- --this is for one serving, but just multiply by the amount of people you are serving.
Slice potato into at least 1/4" thick rounds. Spray cookie sheet with pan spray. Put potato on pan in single layer. Spray top of potato and sprinkle with seasoning.
Bake at 350°F until bottom starts to get brown.(15 Min.) Then turn potato over and sprinkle with more seasoning and cook until the other side starts to brown. Then take out of oven and sprinkle with shredded cheese and chives. Put back in oven to just melt cheese. If you like crispy cheese, leave them in longer. Serve warm.
